Go-Go boots were all the rage in the 60's...made of white patent leather, fitting the shape of the leg tightly with a low heel and a rounded toe. Sounds attractive? Well, that is about how I have looked all week! It has been a busy one to say the least...really been on the "go-go" with lots of bad hair days...it has been a windy start to April and when you are the one on the "go-go", it just might send you into a rage.
My husband is usually the one on the "go-go" with world traveling, but he had a reprieve this week. He spent his birthday at home for the first time in several years, so we celebrated with a new Sunday Dinner recipe and a new variation of his favorite cake. Can you guess the flavor if I give you a hint? He couldn't tell from the icing,
so I gave him this hint....old people salad, double nutty, upside down, citrus cake. We love to challenge each other with a play on words. Can you tell? Give up? Carrot cake with raisins (old people salad carrot and raisin salad), coconut and pecans (double nutty), pineapple (upside down cake), and a twist of orange (citrus).
He said that there were so many flavors to explore that it almost wasn't carrot cake. Maybe I will be more traditional next year or maybe...Carrot Cake Cake Balls.
Sunday Dinner recipes are from around the world (not really, the names just sound that way) since on the "go-go" around the world is where my husband can usually can be found.
Spaghetti D'Amore
I lb ground beef
1/2 cup chopped onion
3/4 cup chopped green pepper
1 can cream of mushroom soup 1 can tomato soup
1 cup grated cheese
8 oz. spaghetti cooked and drained
Lightly brown meat, onion, bell pepper. Add soups and one can of water. Heat. Add half of the cheese, then the spaghetti and combine thoroughly. Put into a 9X13 baking dish. Top with remaining cheese. Bake at 350 for 30 minutes.
Swiss Chicken
6 chicken breasts
6 slices of Swiss cheese
1 can cream of chicken soup
1/4 cup white wine
Pepperidge Farm Stuffing mix
1 stick of butter, melted
Spray 9X13 baking dish with cooking spray. Place chicken in dish. Lay a slice of cheese on each breast. Combine soup and wine. Pour over top of chicken. Sprinkle stuffing mix on top of soup mixture. Drizzle butter over top. Bake at 350 for 1 hour.
Ultimate Carrot Cake
1 box carrot cake mix
1/2 cup orange juice or water
1/2 cup vegetable oil
1 can (8oz) crushed pineapple in juice, do not drain
1 tsp. orange peel (optional)
1 tsp vanilla
4 eggs
1/2 cup chopped nuts
1/2 cup coconut
1/2 chopped raisins (I would leave these out next time)
Grease and flour 2 9in. round cake pans. In large bowl, combine cake mix, orange juice or water, oil, pineapple with juice, orange peel (opt.), vanilla, and eggs Beat on low speed for 30 seconds. Beat on medium speed for 2 minutes. Stir in nuts, coconut and raisins. Pour into pans. Bake at 350 for 30-35 minutes.. Cool 10 minutes in pan. Remove from pans to cooling racks and cool for about 1 hour. Frost with one can of cream cheese frosting (1 tsp. of orange peel can be added to frosting)
I'll put away those Go-Go boots this week, but since it is April, I may have to get out my galoshes!
